Easy New Year’s Eve Dip: Creamy Baked Spinach & Artichoke Dip

The holidays always sneak up fast — one minute it’s Christmas morning, the next you’re wondering what snacks you’re putting out for New Year’s Eve. This is one of our favorite easy, crowd-pleasing dips when you want something warm, comforting, and guaranteed to disappear before midnight.

It’s simple, forgiving, and doesn’t require a long grocery list — perfect for relaxed holiday entertaining.

🧄 Creamy Baked Spinach & Artichoke Dip

Ingredients

  • 1 (14 oz) can artichoke hearts, drained and chopped

  • 1 cup frozen spinach, thawed and squeezed dry

  • 1 cup cream cheese, softened

  • 1/2 cup sour cream

  • 1/2 cup mayonnaise

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 2 cloves garlic, minced

  • Salt & pepper to taste

Optional add-ins:

  • Red pepper flakes for heat

  • A squeeze of fresh lemon juice

  • Chopped green onions on top

Instructions

  1. Preheat your oven to 375°F.

  2. In a medium bowl, mix the cream cheese, sour cream, and mayonnaise until smooth.

  3. Fold in the spinach, artichokes, garlic, mozzarella, and parmesan.

  4. Season lightly with salt and pepper.

  5. Transfer to a small baking dish and smooth the top.

  6. Bake uncovered for 20–25 minutes, until bubbly and lightly golden.

  7. Let cool for a few minutes before serving.

How to Serve

Serve warm with:

  • Toasted baguette slices

  • Crackers

  • Pita chips

  • Fresh veggies

It pairs especially well with champagne, prosecco, or a simple New Year’s cocktail.

A Little Hosting Tip

If you’re hosting, set this dip out early in the evening — it gives guests something comforting to snack on while the night builds. If you’re attending a party, it travels well and reheats easily.
